When the grapes reached their optimum maturity in the vineyard, they are harvested by hand in the early morning or late aﬅernoon. This moment is ideal to keep intact the grape quality before the elaboration.
Aﬅer a meticulous selection of the grapes and grains, the alcoholic fermentation takes place in stainless
steel tanks of small capacity, to enhance all the aromas typical of this grape variety. This process is used to
achieve the greatest aromatic potential that characterized the white wines made by Sauvignon Blanc.
