90% of the grapes shelled. Pre-fermentation maceration of 4 days. Fermentation in barrels and small concrete vats with yeasts from the grape and the harvest. Total maceration of 18 days. Pressed with manual Roman presses, passing the wine to barrels to finish the fermentations. Total aging of 32 months in barrels of 225 liters of French and American oak from our own cooperage in the cellar. Certified organic wine.
Selection of grapes from the vineyards of Adrían, Valdecañal and Almendros. Vineyards in glass of more than 60 years and in lands that define well the essence of the place known as Torremilanos. We also provide a couple of barrels from the Angulo vineyard; trellised vineyard at almost 900 meters in the highest area of Torremilanos. Average age: more than 60 years.
