Description
With this exceptional ecological white we have managed to complete the Vergel range after several years of research and
enthusiasm put into this project. It is the result of the assembly of old vines of Airén, a genuinely Spanish variety and Sauvignon Blanc. They are cultivated in our best rainfed lands according to traditional methods. The yield has been controlled to 500 gr per strain to achieve maximum concentration and aromatic complexity. We devote all our attention to respect for the natural environment and the terroir, manually harvesting the bunches in the coolest hours of the morning. In this way we preserve the integrity of the grape and limit its oxidation. After a light pressing and a well-kept defanging, we control the temperatures so that the native yeasts are able to show all their aromatic expressiveness. Finally we provide volume with a careful work of the fine lees for several weeks
